Potato Soup Recipe

Ingredients
- Medium potatoes : 4
- Onion : 1 cut
- Crushed garlic: 2 minced
- Chicken stock or vegetable broth: 4 cups
- Milk or cream: 1 cup
- Butter: 2 tbsp
- Salt: As per quantity
- Chilli: As per quantity
Shredded cheese, bacon bits, chopped green onion (you can use these ingredients if you want.)
Method
- First, in a large pot or Dutch oven, melt the butter over medium heat.
- Add chopped onion and minced garlic and cook for about 5 minutes.
- Add the diced potatoes and chicken stock or vegetable stock to the pot, then reduce the heat to medium-low and simmer for 15-20 minutes until the potatoes are tender.
- Once the potatoes are cooked, blend to blend the soup until smooth.
- Then stir in the milk or cream and heat, but do not boil.
- Season with salt and pepper to taste.
- Garnish with shredded cheese, bacon bits, chopped green onions and toppings of choice.
