For 2 avocado toasts:INGREDIENTS
✢ 2 slices of gluten free chia seeds bread
✢ 1 large avocado
✢ 4 asparagus
✢ 5 cherry tomatoes
✢ Sprouted seeds
✢ Fresh oregano
✢ Lemon juice
✢ Sesame seeds
✢ Salt, pepper
Clean the asparagus, break off the woody part at the bottom and peel them.
Heat a grill pan over medium high heat with a bit of olive oil. Fry the asparagus in the grill pan with the tomatoes until the tomatoes are blisted and the asparagus just cooked, turning as needed.
Mash the avocado flesh with a fork. Add a squeeze of lemon, salt and pepper (optional: add chili for a spicy flavor)
Toast the bread slices and top with mashed avocado and grilled asparagus and tomatoes. Garnish with sesame seeds, fresh oregano, sprouted seeds and salt and pepper to taste.
Serve immediately and enjoy!
