This moist and perfectly spiced carrot cake is incredibly easy to bake and will make your taste buds happy. Simply add your fresh ingredients and let the magic happen in the oven!

Gluten free, dairy free, refined sugar free, vegan-friendly. 

1 pack makes one spiced carrot cake. 

Ingredients: Flour (brown rice*, chickpea*), coconut sugar*, potato starch*, baking powder* (corn starch*, potassium tartrate, sodium bicarbonate),  cinnamon*, ginger*, nutmeg*.

How to make
Just add 250 g finely grated carrots, 100 ml oil and 3 eggs. 
For vegan muffins, replace eggs with 100 g applesauce.

  1. Preheat oven to 170 degrees.
  2. Grease a cake pan with oil (size about 25 x 12cm).
  3. Combine eggs and oil in a large bowl and whisk well.
  4. Add the baking mix to the mixture in the large bowl and stir until just combined. Fold in the grated carrots.
  5. Pour the batter into the greased cake pan. Bake about 45 mins, or until a toothpick inserted in the cake comes out clean. Let it cool down completely.

Tip: Make a dairy free frosting by whisking 200 g vegan cream cheese with 60 g icing sugar and ½ tsp vanilla extract.
