Ingredients
- Flour : 2 cups (250 grams)
- Baking powder: 2 teaspoons
- Baking soda: 1½ tsp
- Cinnamon: 1 teaspoon
- Crushed ginger: Half teaspoon
- Nutmeg: ¼ tsp
- Salt: Half teaspoon
- Granulated sugar: 1 cup (200 grams)
- Brown Sugar : 1 cup (200 gm)
- Vegetable oil: 1 cup (240 ml)
- Eggs: 4
- Vanilla essence: 2 tsp
- Grated carrots: 2 cups 260 grams
- Walnuts: 1 cup 100 grams
- Raisins : 1 cup 150 grams
- Cream cheese: 225 grams
- Butter: ½ cup 115 grams
- Powdered sugar: 4 cups 480 grams
- Vanilla essence: 2 tsp
Method
- Grease and flour two 9-inch round cake pans, preheat oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- Then in a large bowl, beat the granulated sugar, brown sugar and oil together until well mixed. Add an egg, beat well again. Then add vanilla essence.
- Mix grated carrot, walnuts, raisins and pineapple evenly.
- Divide the batter evenly between the pans. Bake for 25-30 minutes, insert a toothpick in the center and see if the toothpick comes out clean. If the toothpick comes out clean then you know the cake is baked. Let the cakes cool in the pan for 10 minutes.
- Beat the cream cheese and butter together in a large bowl until smooth and creamy. Gradually add one cup of powdered sugar and beat well. Beat again with vanilla essence.
- Once the cake is baked, cut the cake into two layers. Then place the first layer on a cake base. Place the second layer of cake on top of the first layer with some cream and then cover it again with the same amount of cream. Decorate the cake with cream. This is how carrot cake is made.
