Chickpea curry, a staple in many cuisines around the world, is a hearty and flavorful dish known for its robust combination of spices and tender chickpeas. Ingredients

  1. Onion : 3 large, thinly sliced.
  2. Tomatoes : 2 big ones
  3. Ginger paste : 1 tbsp
  4. Garlic paste: 2 tbsp
  5. Vegetable oil or canola oil: 2 tbsp
  6. Bay leaves: 2
  7. Cloves : 5-6 pcs
  8. Green cardamom : 3-4 t
  9. Pepper : 5-6 t
  10. Cumin powder: 1 tsp
  11. Coriander powder: 2 tsp
  12. Red Chilli Powder : 1/2 tsp
  13. Turmeric: 1/4 tsp
  14. Garam Masala : 2 tsp
  15. Can chickpeas : 100 gm
  16. Kosher salt: To taste
  17. Water : As per quantity (for making gravy)
  18. Ginger : 1 slice julienne
  19. Coriander: 2 tbsp fresh

Method

  1. First gather the ingredients together.
  2. Make a paste of chopped onions, tomatoes, ginger and garlic.
  3. Heat vegetable oil in a pan over medium heat.
  4. Then add bay leaves, cloves, cardamom, peppercorns to this hot oil and keep sauteing till it turns slightly dark, lightly fragrant.
  5. Next add the rest of the chopped onions and fry until light golden.
  6. Add the onion-tomato paste prepared earlier, cook till the oil starts separating from the paste.
  7. Next add cumin seeds, coriander, red chillies, turmeric, garam masala and stir for 5 minutes.
  8. Wash the chickpeas well in water and drain
  9. Now pour the chickpeas in the masala and mix well with the masala.
  10. Add about 1/2 cup hot water to make gravy and keep stirring with salt to taste.
  11. Then cover with a lid and let it cook for 10 minutes.
  12. If some chickpeas are thick then mash with flat spoon or potato masher and mix everything well. This is how Chhole (Chickpea Curry) is prepared.
  13. When Chhole (Chickpea Curry) is ready, garnish with ginger, finely chopped fresh coriander leaves. Also, a lemon and a handful of finely chopped onion can be used as garnish, which adds more flavor.
